Coconut Bread - cooking recipe
Ingredients

2 1/2 c. all-purpose flour
1 1/4 c. flaked coconut, toasted
1 c. sugar
1 Tbsp. plus 1 tsp. baking powder
1 tsp. salt
1 1/2 c. milk
2 Tbsp. vegetable oil
1 egg
1 tsp. coconut extract
Preparation

Combine first 5 ingredients in a large bowl; make a well in center of mixture.
Combine remaining ingredients; add to dry ingredients, stirring until moistened.
Spoon into a greased and floured 9 x 6 x 3-inch loaf pan.
Bake at 350\u00b0 for 1 hour or until a wooden pick inserted in center comes out clean.
Cool bread in pan for about 10 minutes.
Remove from pan and cool completely on a wire rack.
Yield:
1 loaf.
