Lemon-Thyme Baked Potatoes - cooking recipe

Ingredients
    3 lb. or so small red potatoes
    1/4 c. olive oil
    1/4 c. butter, melted
    6 Tbsp. lemon juice
    2 tsp. thyme
    salt and pepper to taste
Preparation
    Preheat oven to 375\u00b0.
    Butter large baking dish.
    Cut potatoes into quarters.
    Mix olive oil and melted butter together.
    Pour over potatoes.
    Bake 1 hour, stirring every 15 minutes or so. Combine lemon juice, thyme, salt and pepper.
    Pour over baked potatoes.
    Mix thoroughly.
    Bake an additional 15 minutes. Remove from oven and serve on platter.
    Serves about 6.
    Tastes great as cold leftovers!
