Watermelon Rind Pickle - cooking recipe

Ingredients
    13 lb. watermelon rind
    10 lb. sugar
    2 qt. vinegar
    1 pt. water
    2 gal. water (for soaking)
    9 to 10 drops oil of cloves
    1 bag pickling lime
Preparation
    Peel and
    cut rind into 1-inch wide squares.
    Soak rind in water
    and
    lime
    mixture\tovernight
    or
    12
    hours
    (use enamelware\tor
    crockery).\tCover
    rind completely in mixture. After soaking,
    rinse
    well,
    boil\t20 minutes in clear water. Drain and cool in ice water until rind is cold.
    Drain and dry each piece\tof
    rind
    with\tclean
    cloth.
    Mix sugar, vinegar, water and oil of cloves; pour over rind and cook until rind is clear;
    approximately
    1
    hour.
    Pack
    jars with rind and fill with syrup.
    Wipe
    top
    of\tjars clean, seal with boiled lids. Cover jars after sealed with a towel to hold heat to the lids. Makes 8 quarts.
