Appetizer Quesadillas - cooking recipe
Ingredients

3 (6-inch) flour tortillas
corn oil (for frying)
1 c. shredded Monterey Jack cheese with jalapeno pepper
1/2 c. shredded Cheddar cheese
1/2 c. finely chopped tomato
cilantro, minced
Preparation

Fry tortillas one at a time in hot oil in skillet until crisp and golden, turning once.
Drain on paper towels.
Place on baking sheet.
Sprinkle mixtures of cheese over tortillas.
Top with tomato.
Bake at 350\u00b0 for 10 minutes or until each cheese melts. Cut each tortilla into quarters.
Top with cilantro.
Serve warm. Yields 3 to 6 servings.
