Mexican Casserole - cooking recipe
Ingredients

10 oz. cooked ground turkey
1/2 c. green pepper, diced
1 medium onion, chopped
2 c. canned tomatoes, chopped
salt and pepper to taste
6 oz. jalapeno cheese
1 tsp. garlic, chopped
1 pkg. taco seasoning (mild)
2 c. cooked rice
Preparation

Brown turkey in skillet.
Add onion and pepper.
Simmer 5 minutes.
Add tomatoes, taco seasoning, salt and pepper.
Simmer until liquid is gone.
Add cheese (reserve small amount).
Stir until cheese has melted.
In an 8 x 8-inch pan, layer meat mixture, then rice mixture.
Repeat.
Top with cheese.
Bake at 350\u00b0 until cheese melts, about 15 minutes.
