African Chicken(Eating Light) - cooking recipe

Ingredients
    1 pkg. cut-up chicken
    4 Tbsp. peanut oil
    1 c. onion, chopped
    2/3 c. whole, unblanched almonds
    2 c. hot water, divided
    1 (6 oz.) can tomato paste
    1 tsp. salt
    1/2 tsp. black pepper
    1 (10 oz.) pkg. frozen cut okra
    hot, cooked rice (enough to serve 4)
Preparation
    In large skillet, heat oil over high temperature.
    Add chicken and brown, turning, on all sides.
    Remove and discard all but 2 tablespoons oil.
    Reduce heat to low and add onion.
    Cook, uncovered, about 5 minutes.
