Roughy In Butter Sauce - cooking recipe

Ingredients
    orange roughy fillets
    parsley
    salt
    pepper
    flour
    salted butter
    vegetable oil
    lemon juice
Preparation
    Pat the fish dry; salt and pepper to taste.
    Dredge in flour. Shake off excess.
    Heat 1/2 tablespoon of vegetable oil and 1 1/2 tablespoons of butter in a large skillet.
    When butter is hot, place fish in skillet and cook for 5 minutes.
    Carefully turn with spatula and cook for 5 more minutes.
    Place on serving platter and sprinkle with lemon juice and parsley.
    Melt additional butter (2 tablespoons); when it turns light brown, pour it over fish.
