Vegetables Italiano - cooking recipe

1 c. Italian seasoned bread crumbs
1/3 c. grated Parmesan cheese
2/3 c. light reduced calorie mayonnaise
6 c. assorted vegetables (broccoli florets, carrot slices, cauliflower florets, small mushrooms, green or red bell pepper strips, yellow squash or zucchini strips)
Preparation

Preheat oven to 425\u00b0. In large plastic food storage bag, combine crumbs and cheese. Shake and blend well. In another large plastic bag, combine mayonnaise and vegetables. Coat well. Add mayonnaise coated vegetables, half at a time, to crumb mixture; shake and coat well. Arrange in single layer on ungreased cookie sheet so pieces don't touch. Bake 10 minutes or until golden.
