Potato Candy - cooking recipe

Ingredients
    1 medium potato, cooked
    pinch of salt
    1 Tbsp. butter
    1 tsp. vanilla
    2 lb. 10x sugar
    peanut butter
Preparation
    Mash potato while hot; add salt, butter and vanilla.
    Beat until fluffy.
    Add sugar, gradually, stirring with spoon until mixture is pliable but not too stiff to roll out.
    Place on waxed paper, flour and roll out.
    Spread with peanut butter and roll up about the size of a quarter in diameter.
    Cut 1/4 inch thick. Looks like pinwheels.
