Ingredients

1 standing aged prime rib roast or any roast will do
salt and pepper
Preparation

Preheat oven to 375\u00b0.
Rub meat with salt and pepper.
Place meat, fat side up, in a shallow baking pan.
Put roast in oven and cook for 1 hour.
Turn off heat; do not open door at any time, regardless of length of time the meat has been in oven.
Thirty to forty minutes before serving, turn oven on again to 375\u00b0.
Cook meat for 30 to 40 remaining minutes.
Remove roast to serving platter.
Meat will be very brown and crisp on outside.
Carve thin slices.
