Warm Black Bean And Spinach Salad - cooking recipe

Ingredients
    4 c. fresh spinach
    1 Tbsp. vegetable oil
    1 c. chopped onion
    1/4 c. sliced green onions
    1 clove garlic, crushed
    1/2 c. chopped red bell pepper
    1 (15 oz.) can black beans, drained
    2 Tbsp. water
    2 Tbsp. white wine vinegar
    2 Tbsp. balsamic vinegar
    1/8 tsp. crushed red pepper
    1/8 tsp. salt
    1/8 tsp. pepper
Preparation
    Remove large stems from spinach.
    Tear spinach into bite size pieces; place into bowl and set aside.
    Heat oil in large, nonstick skillet over medium heat.
    Add onion, green onions and garlic; saute 4 minutes.
    Add bell pepper; saute 2 minutes.
    Add beans, water, vinegars, salt, red pepper and black pepper; cook for 2 minutes, or until thoroughly heated, stirring frequently. Immediately pour bean mixture over the spinach and toss.
    Yields 6 servings.
