Ingredients

1 lb. hamburger
1/4 c. onion, chopped
1/4 c. green pepper, chopped
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. butter
1 tsp. salt
6 medium potatoes, shredded
3 eggs
1/3 c. milk
2 c. shredded cheese
Preparation

In skillet, brown beef with onion, green pepper, 1/2 teaspoon salt and pepper.
Remove meat from skillet.
Reduce heat to low and melt butter.
Spread potatoes and sprinkle with 1 teaspoon salt.
Top with beef mixture.
Beat eggs and milk; pour over all. Cook, covered, until potatoes are tender, 25 to 30 minutes.
Top with cheese and melt.
