Chicken Dijon - cooking recipe

Ingredients
    1 chicken (3 lb.), quartered
    4 Tbsp. butter or butter and oil
    1 small onion, finely chopped
    1 clove garlic, finely chopped
    1 (14 oz.) can or homemade chicken broth
    2 Tbsp. Dijon mustard
    1/2 tsp. tarragon
Preparation
    Wash and dry
    chicken
    well.
    Heat
    butter
    over medium heat and saute
    chicken
    until
    lightly
    browned.
    Remove from skillet and pour off all but 2 tablespoons fat.
    Add onion and garlic; saute one minute.
    Add
    broth
    and stir up any browned pieces from bottom of pan.
    Blend in mustard and tarragon.
