Sweet Potato Soup - cooking recipe
Ingredients

3 medium sweet potatoes, peeled and sliced (about 3 c.)
2 c. water
1 medium parsnip, chopped
1 medium onion, chopped
3/4 tsp. instant chicken bouillon granules
1/4 tsp. ground nutmeg
1 1/2 c. skim milk
1/4 c. plain low-fat yogurt
Preparation

In a large saucepan, combine sweet potatoes, water, parsnip, onion, bouillon granules and nutmeg.
Bring to boiling; reduce heat.
Cover and simmer for 20 to 30 minutes or until vegetables are very tender.
Transfer to a blender container.
Cover and blend until smooth.
Return mixture to saucepan.
Stir in milk and heat through.
