Potato Croquettes - cooking recipe

Ingredients
    5 large raw potatoes
    3/4 c. grated Parmesan cheese
    1/4 c. chopped parsley
    3 cloves minced garlic or 1 1/2 tsp. garlic powder
    1/4 lb. Italian salami, chopped
Preparation
    Peel and quarter potatoes, then boil in salted water until soft.
    Allow to cool, then mash.
    Add the remaining ingredients to the mashed potatoes.
    Mix together well and form into oblong croquettes.
    Fry until golden brown in hot olive oil.
