Sausage And Garlic Mashed Potatoes - cooking recipe

Ingredients
    1 garlic clove
    olive oil for frying
    1 c. plain yogurt
    3 Tbsp. olive oil
    4 russet potatoes
    12 whole sage leaves
    1 Tbsp. fresh sage leaves, minced
Preparation
    In a small saucepan simmer garlic in oil until golden.
    Stir in sage and remove pan from heat.
    Let stand 15 minutes and strain out solids.
    Fry sage leaves in 1/8 cup olive oil for 3 seconds. Sprinkle with coarse salt.
    Peel potatoes and quarter.
    Cover with 1 inch cold salted water.
    Simmer 20 minutes.
