Fish Baked With Summer Squash - cooking recipe

Ingredients
    2 tsp. oil
    1 tsp. salt
    1 lb. orange roughy
    1/2 tsp. pepper
    2 medium onions, thinly sliced
    2 medium zucchini, sliced
    2 yellow squash, sliced
    1/3 c. fresh lemon juice
    3 Tbsp. freshly chopped herbs (combination of thyme, tarragon, chives, parsley and dill)
Preparation
    Preheat oven to 400\u00b0.
    Coat a 9 x 12-inch pan with oil. Spread half vegetables.
    Lay fish on top.
    Cover fish with remaining vegetables.
    Sprinkle lemon juice, salt and pepper. Cover tightly with foil.
    Bake 45 minutes.
    Just before serving, sprinkle with herbs.
    Serves 4.
