Cebiche - cooking recipe
Ingredients

2 lb. mixed seafood (shrimp, clams, firm fish)
1 large onion, thinly sliced
1/4 c. chopped cilantro or parsley
2 cans green chilies, finely sliced
3 tsp. olive oil
salt to taste
pepper to taste
lime juice to cover (or mixture of lemon and lime juice)
2 ears of corn, cooked and chopped
2 sweet potatoes, cook
Preparation

Combine all ingredients, except corn and sweet potatoes and refrigerate two hours.
To serve place in a large dish.
Garnish with the corn and sweet potatoes.
