Potato Salad - cooking recipe

Ingredients
    6 to 7 potatoes
    2 Tbsp. butter
    1/2 c. chopped onion
    1/4 c. chopped red and green peppers
    1/4 c. sweet and sour pickles, chopped
    1/4 c. celery, chopped
    1/4 c. fresh cucumbers, sliced thin
    2 to 3 eggs, hard-cooked and finely chopped
    1 carrot, grated
    1/8 c. vinegar
    salt and pepper to taste
    3/4 c. mayonnaise
Preparation
    Boil potatoes in the skins; drain, let cool, peel and dice. Add butter to hot potatoes.
    Mix together onion, peppers, pickles, celery, cucumbers, eggs and carrot.
    Add to diced potatoes along with vinegar.
    Season with salt and pepper to taste.
    Toss all together with mayonnaise.
    (You can adjust mayonnaise more or less, as needed.)
