Smoked Sausage Rice Skillet - cooking recipe

Ingredients
    1/2 c. sliced carrots
    1 zucchini, cut lengthwise into halves, then sliced
    1 Tbsp. butter
    1 (8 oz.) can stewed tomatoes
    1 c. water
    1/4 tsp. basil leaves
    1/4 tsp. thyme leaves
    16 oz. smoked sausage, cut into pieces
    1 1/2 c. uncooked rice (instant)
Preparation
    Saute carrots and zucchini in margarine in skillet over medium heat 3 minutes.
    Add tomatoes with juice, water, basil, thyme and sausage.
    Bring to a boil.
    Reduce heat to low; cover and simmer 5 minutes.
    Stir in rice.
    Cover and remove from heat; let stand 8 minutes, stirring after 4 minutes.
    Yields 5 servings.
