Fruity Chicken Rice Salad - cooking recipe

Ingredients
    1/3 c. red wine vinegar
    2 Tbsp. honey
    1 Tbsp. oil
    1 tsp. sugar
    1/2 tsp. salt
    1 1/4 c. water
    1/2 c. diced carrots
    1 1/2 c. Minute instant brown rice
    1/2 c. raisins
    2 c. cooked diced chicken
    1 c. red or green seedless grapes
    2 Tbsp. chopped toasted almonds
    1 Tbsp. chopped parsley
Preparation
    Mix vinegar, honey, oil, sugar and salt in small bowl; set aside.
    Bring water, carrots and raisins to boil in medium saucepan.
    Stir in rice.
    Return to boil.
    Cover; reduce heat and simmer 5 minutes.
    Remove from heat and stir.
    Cover and let stand 5 minutes.
    Stir in remaining ingredients.
    Add honey dressing and toss.
    Refrigerate at least 1 hour.
    Makes 5 servings.
