Summer Lime Chicken Breastshouston, Texas - cooking recipe

Ingredients
    4 boneless, skinless chicken breasts
    1/3 c. olive oil
    juice of 3 limes
    4 garlic cloves, peeled and minced
    3 Tbsp. fresh cilantro, chopped
    1/2 tsp. salt
    1/2 tsp. ground black pepper
    Red and yellow peppers, roasted
Preparation
    Trim fat from chicken breasts and pound thin between 2 sheets of wax paper.
    Combine olive oil, lime juice, garlic, 2 Tbsp. cilantro, salt and pepper in a bowl.
    Pour over the chicken and marinate for at least 1 hour.
    Grill or broil the chicken breasts for 2 minutes on each side.
    Remove to a platter.
    Sprinkle with remaining cilantro and serve with roasted red and yellow peppers.
