Morning Glory Muffins - cooking recipe
Ingredients

2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1 apple, chopped
1/2 c. raisins
1/2 c. shredded coconut
1/2 c. chopped walnuts
3 large eggs or Egg Beaters
1 c. vegetable oil
2 tsp. vanilla
Preparation

Preheat oven to 400\u00b0.
Grease and flour 18 muffin cups.
In a large bowl, stir together the flour, sugar, baking soda, salt and cinnamon.
Stir in carrots, apples, raisins, coconut and nuts.
In a medium size bowl, whisk together the eggs, oil and vanilla.
Add to the dry ingredients and stir just until the dry ingredients are moistened.
Spoon into the prepared muffin cups and bake for about 20 minutes or until tops are golden and spring back when lightly pressed.
