Creole Okra - cooking recipe
Ingredients

3 slices bacon, diced
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. sliced okra
1 c. uncooked rice
2 c. chicken broth
1 tsp. salt
1/8 tsp. black pepper
Preparation

Saute bacon until crisp.
Drain off all but one tablespoon of drippings. Add onion, green pepper and okra.
Cook until vegetables are tender-crisp.
Stir in rice, broth and seasonings. Bring to a boil. Reduce heat.
Cover and simmer for 15 minutes. Add tomatoes and fluff lightly.
Replace lid and let stand 12 minutes.
Serves 6.
