Southern German Potato Salad(Schwabischer Kartoffelsalat) - cooking recipe

Ingredients
    2 lb. (6) potatoes
    1/2 c. beef or chicken stock
    1/2 large onion, chopped
    6 Tbsp. wine vinegar
    6 Tbsp. olive oil
    1 tsp. salt
    1/2 tsp. freshly ground pepper
    1/4 c. chopped parsley or chives
Preparation
    Wash and scrub potatoes; boil in skins until tender.
    Let cool only enough to peel and slice.
    Pour stock over to be absorbed by potatoes.
    Add onion.
    Mix remaining ingredients; beat smoothly together.
    Pour over potatoes.
    Serve warm or chilled.
