Country Spring Green Cabbage Vegetable Pot - cooking recipe

2 Tbsp. oil
1 c. finely sliced lean ham pieces
1 qt. water
1 (2 lb.) green cabbage
1 lb. small new potatoes, peeled or scraped
3 carrots, cut into pieces
Preparation

Wash the ham and place it in a pot with the oil.
Cook slowly over medium low heat until brown.
Add the water and bring to a boil.
Reduce the heat to very low and simmer for 20 minutes. Remove the ham and set it aside.
Tear away the few outer leaves of the cabbage and cut the head into 8 pieces.
Put the cabbage into the pot, along with the potatoes and carrots, and cover.
Let cook slowly for 20 to 25 minutes, turning the vegetables lightly to cook evenly.
If you wish, you can add the ham pieces back to the pot and heat before serving.
Serves 6 to 8.
