Bean Soup - cooking recipe
Ingredients

2 lb. dried Great Northern beans
1 (16 oz.) can tomatoes, diced
1/2 (1 oz.) jar dried soup greens (can shred carrots instead)
1 link reduced-fat smoked sausage (8 oz.), diced into small pieces
1 oz. dried onions
pepper (salt after cooked, if necessary)
Preparation

Soak beans overnight or 4 to 5 hours. Cook with all ingredients until tender. Add water in pot to about 4-inches from top. (Needs room to simmer or will boil over.) Usually takes about 3 hours (to be well done).
