Ingredients

2 c. cranberries
1 1/4 c. water
1 c. sugar
1/2 c. water
pinch of salt
1 egg white
Preparation

Cook cranberries in 1 1/4 cups water until skins burst.
Mash through sieve and cool.
Combine 1 cup sugar, 1/2 cup water and pinch of salt.
Boil for 10 minutes until syrupy.
Cool.
Add salt to egg white and beat until stiff.
Add syrup to cranberry pulp, then add the beaten white of egg.
Turn into a freezing tray and freeze.
After mixture freezes to a \"mushy\" consistency, stir in tray with a fork.
If served as a dessert, use 1 1/4 cups sugar.
