Ingredients

2/3 c. maple syrup
3 Tbsp. dijon style mustard
2 Tbsp. cider vinegar
2 Tbsp. soy sauce
salt and pepper to taste
2 lb. lean, boneless pork loin
Preparation

Stir together maple syrup, mustard, vinegar, soy sauce, salt and pepper. Spread evenly over pork and place in a shallow pan. Roast in a 350 degree oven until internal temperature reaches 150 degrees. About 45-85 minutes. remove from oven and let stand ten minutes before slicing. (Also great made with chicken.)
