Chicken Gumbo - cooking recipe
Ingredients

1 large chicken breast
2 cans chicken broth
1 can tomato sauce (5 oz.)
1 can stewed tomatoes
1 small can corn
1 medium onion, chopped
1 rib celery, chopped
1/4 green pepper, diced
1/4 red pepper, chopped
1 bag frozen okra or 1 lb. fresh okra
1/4 lb. pork sausage meat
2 Tbsp. flour
3 Tbsp. rice
parsley flakes, salt, garlic powder, paprika, gumbo seasoning, if available (seasonings to taste)
2 bouillon cubes
Preparation

Cook chicken breast in broth and water at least 1 hour.
Remove from heat and let cool to skin, bone and dice (bite sized).
Add all ingredients to soup.
Add okra, cut in bite size pieces.
Cook sausage meat (in small pieces) and add flour to make a roux.
Add to soup.
Simmer about 1 1/2 hours.
Add rice last 15 minutes.
If too thick, add another can chicken broth.
If too thin, add more rice.
