Eggplant Parmesan - cooking recipe
Ingredients

2 medium eggplants
1 tsp. salt
2 cans tomato sauce
1 Tbsp. Italian seasoning
3/4 lb. Mozzarella cheese, thinly sliced
1/2 lb. mild Cheddar cheese
1/4 c. Parmesan cheese
Italian bread crumbs
olive oil
2 eggs
1/2 tsp. pepper
Preparation
-
Slice eggplant 1/4-inch thick.
Dip slices into bowl with beaten eggs then coat eggplant with mixture of bread crumbs, salt and pepper.
Fry in hot olive oil.
When lightly browned remove from oil and drain on paper towels.
