Ingredients

1 3/4 c. ground pimentos or sweet red peppers or green
1/4 c. ground hot red peppers or hot yellow
1 c. cider vinegar
5 c. sugar
1 (6 oz.) pkg. Certo
red or green food coloring (optional)
Preparation

Using rubber gloves to handle hot peppers, place peppers and all their juices, vinegar and sugar in a 5 or 6-quart kettle. Stir over high heat to dissolve sugar and then boil for 4 minutes. Remove from heat; cool 1 minute and add Certo and coloring and stir well.
Pour into sterilized glasses and seal with paraffin or use jars with 2 piece lids and process 10 minutes in hot water bath.
Makes about 4 to 5 pint jars.
