Low-Fat Ginger Cookies - cooking recipe

Ingredients
    1/4 c. plus 2 Tbsp. margarine, softened
    2/3 c. plus 1 Tbsp. sugar, divided
    1/4 c. molasses
    1 egg
    2 c. all-purpose flour
    2 tsp. baking soda
    1 tsp. ginger
    1 tsp. cinnamon
    1/2 tsp. mace
Preparation
    Cream margarine and gradually add 2/3 cup sugar.
    Beat with electric mixer until light and fluffy.
    Add molasses and egg; beat well.
    Combine flour and next 4 ingredients.
    Gradually add to creamed mixture and stir well.
    Divide dough in half and wrap both in plastic wrap.
    Freeze for 30 minutes.
    Shape into 1-inch balls, roll in remaining sugar and place 2-inches apart on cookie sheet coated with vegetable spray.
    Bake at 350\u00b0 for 12 minutes; cool. Store in airtight container.
