Chicken Breasts With Tomato Butter - cooking recipe

Ingredients
    4 Tbsp. butter (room temperature)
    1/4 tsp. minced garlic
    1 tsp. tomato paste
    1 tsp. chopped fresh parsley
    1/4 c. flour
    salt and pepper
    4 boneless, skinless chicken breast halves
    2 Tbsp. oil
Preparation
    Combine 3 tablespoons of the butter with the garlic, tomato paste and parsley.
    Scrape onto a piece of plastic wrap and use to help form a cylinder of butter.
    Wrap tightly and chill.
    Combine flour, 1/2 teaspoon salt and 1/4 teaspoon pepper.
    Dredge chicken in flour mixture.
    Melt remaining 1 tablespoon butter in large skillet.
    Add chicken; cook over medium heat, turning once; cook until done (about 10 minutes).
    Top hot chicken with slices of prepared butter.
    Serves 4.
