Spinach Cheese Bits - cooking recipe

Ingredients
    1 (10 oz.) pkg. pepperoni
    2 c. Ricotta cheese
    1 1/2 c. grated fresh Parmesan
    1 tsp. dried oregano
    2 eggs
    1 (10 oz.) frozen chopped spinach
    1/4 c. chopped onion
    1/2 tsp. salt
    1/4 c. sour cream
Preparation
    Mix all ingredients except pepperoni, making sure the spinach is well drained. Place a pepperoni in the bottom of each mini muffin cup pan and place a spoon full of the mixture on top. Bake at 375\u00b0 for 20 to 25 minutes. Cool 10 minutes before taking out of pan.
