Real Mincemeat Pie With Whiskey Hard Sauce - cooking recipe

Ingredients
    1 c. chopped cooked beef
    1/4 lb. suet or cold butter, cut up
    3 cooking apples, pared, cored and cut up
    1 orange, seeded, cut up
    1 Tbsp. lemon juice
    2 c. dried fruits (cherries, cranberries, raisins etc)
    1/4 c. brown sugar
    1/4 tsp. salt
    1 tsp. each cinnamon, allspice
    1/2 tsp. ground nutmeg
    1/4 tsp. ground cloves
    1/8 tsp. ground ginger
    1 c. apple or white grape juice
    double crust pastry
Preparation
    Grind beef and suet (butter) together or chop in food processor.
    Chop apples and orange or add to processor using on and off motions.
    Combine all ingredients, except pastry in a large pot.
    Simmer about 1 hour or until most of the liquid is gone.
    Cool.
    Prepare pastry for 2 crust pie.
    Line a 9 to 10 inch pie pan with bottom crust; fill with cooled mincemeat mixture, top with remaining crust.
    Crimp edges and prick top. Bake at 450 degrees for 10 minutes then lower heat to 350 degrees and bake for 30 minutes more.
