Ingredients

1/2 c. butter (at room temperature)
1/2 c. sugar
1/8 tsp. salt
4 1/2 tsp. fresh lime juice
1 1/2 c. flour
2 Tbsp. sugar, mixed with 2 tsp. grated lime rind
Preparation

With electric beater, cream butter and sugar.
Beat in salt and lime juice.
Add flour with a wooden spoon.
Chill until firm. Shape into 2 (4-inch-long) rolls; chill until firm enough to slice.
Cut into thin (about 1/8-inch) slices.
Place on ungreased cookie sheets.
Sprinkle with sugar and lime rind.
Bake for 6 to 8 minutes in a 375\u00b0 oven.
