Pat'S Squash Garden - cooking recipe

Ingredients
    2 Tbsp. olive oil
    3 c. squash (zucchini, yellow, patty, etc.)
    1 medium onion
    1 (6 oz.) can V-8 (spicy)
    garlic powder to taste
    salt to taste
    pepper to taste
    Parmesan cheese
Preparation
    Cut squash approximately 1/8-inch thick.
    Chop or cut onion. Add garlic powder, salt and pepper.
    Saute in large covered skillet until tender.
    Add V-8 juice.
    Do not cover.
    Simmer until V-8 juice has cooked into the squash.
    Remove from heat.
    Place on serving dish and sprinkle with Parmesan cheese as little or as much as you like.
