Chicken And Spinach Enchiladas - cooking recipe

Ingredients
    1 whole chicken
    1 onion, chopped
    2 cloves garlic, minced
    1/8 tsp. cumin
    1/8 tsp. coriander
    1 fresh jalapeno, sliced
    1 (10 oz.) pkg. fresh spinach
    2 tsp. white vinegar
    12 flour tortillas
    1 (16 oz.) carton sour cream
    1 to 2 c. shredded Monterey Jack or Cheddar cheese
    paprika
    fresh cilantro (for garnish)
Preparation
    Place chicken in pot and add water to cover.
    Add onion, garlic, cumin and coriander and cook 1 to 2 hours or until chicken is tender.
    Remove chicken and discard skin and bones.
    Reserve the cooking broth and keep warm.
