4 Tbsp. butter
6 Tbsp. all-purpose flour
1 c. hot milk
1/2 tsp. salt
1/8 tsp. freshly ground white pepper
1/8 tsp. nutmeg
4 egg yolks
6 egg whites (room temperature)
1/8 tsp. cream of tartar
4 oz. Gruyere cheese, shredded
Preparation

Preheat oven to 350\u00b0.
Use a pastry brush to generously coat inside of a 1 1/2-quart souffle dish with additional soft butter; dust lightly with flour.
