Chicken Salad Supreme - cooking recipe

Ingredients
    1 romaine lettuce (bite size)
    1 cucumber, sliced
    2 medium carrots, grated
    6 cherry tomatoes
    1 (16 oz.) can chunk pineapple
    1 regular can mandarin oranges
    1 pt. fresh strawberries, sliced
    6 small chicken breasts
    1 rib celery, cut in chunks
    12 oz. pineapple juice
Preparation
    Boil chicken in saucepan in pineapple juice, plus juice from pineapple chunks and mandarin oranges.
    Salt and pepper chicken and add celery before boiling.
    When done, debone and chill.
    Combine lettuce, cucumber, carrots, oranges, pineapple, strawberries and tomatoes in large bowl.
    Place chicken pieces on top.
    Serve with crackers or Honey-Yogurt Dressing.
