Hot And Sour Soup - cooking recipe

Ingredients
    1 whole medium chicken breast, skinned, halved lengthwise and boned
    1 Tbsp. soy sauce
    1 Tbsp. dry sherry or sake
    4 c. water
    2 Tbsp. instant chicken bouillon granules
    1/2 c. water chestnuts, drained and thinly sliced
    1/2 c. bamboo shoots, halved lengthwise
    2 Tbsp. rice vinegar or white vinegar
    1/2 tsp. pepper
    8 oz. (about 1 1/2 c.) fresh bean curd (tofu)
    2 Tbsp. thinly sliced green onions
Preparation
    Finely chop the chicken.
    In a bowl, combine chicken, soy sauce and dry sherry or sake; set aside.
    In a large saucepan, bring water and bouillon granules to boiling.
    Stir in the chicken mixture, water chestnuts, bamboo shoots, vinegar and pepper. Simmer, covered, for 5 minutes.
    Slice the fresh bean curd into 1 1/2 x 1/4-inch strips; add to the soup.
