Spicy Pineapple Zucchini Bread - cooking recipe
Ingredients

3 eggs
2 c. sugar
2 c. grated peeled zucchini
1 can crushed pineapple, drained
1 tsp. salt
1 1/2 tsp. cinnamon
1 c. walnuts and/or currants
1 c. oil
2 tsp. vanilla
3 c. flour
2 tsp. soda
1/2 tsp. baking powder
3/4 tsp. nutmeg
Preparation

Beat eggs.
Add oil and vanilla.
Beat until foamy.
Stir in zucchini and pineapple.
Combine dry ingredients, walnuts and currants.
Stir gently into zucchini mixture until well blended. Bake at 350\u00b0 in loaf pan.
