Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and sliced
    1 1/2 c. sharp cheese, grated
    1 1/2 c. Ritz cracker crumbs
    1 can cream of mushroom soup
    4 eggs
    1 medium onion, chopped
    1 stick margarine
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Cook
    eggplant\tuntil
    mushy;
    drain
    and add remaining ingredients.
    Reserve
    1/2\tcup cheese, 1/2 cup cracker crumbs and small
    amount of butter for topping.
    Mix well and pour in baking dish.
    Sprinkle
    cheese
    and
    cracker
    mixture on top. Bake at 350\u00b0 for 30 to 40 minutes; or until brown.
