Fresh Apple Coffee Cake - cooking recipe
Ingredients

4 c. unpeeled, finely chopped cooking apples
1/2 c. unsweetened orange juice, divided
1 1/2 tsp. cinnamon
1 c. sugar
1/2 c. oleo, softened
4 egg substitutes
1/4 c. skim milk
3 c. sifted cake flour
2 tsp. baking powder
1/4 tsp. salt
2 1/2 tsp. vanilla
2 Tbsp. brown sugar
vegetable cooking spray
Preparation

Combine apple, 1/4 cup orange juice and cinnamon.
Set aside. Cream sugar and oleo until light and fluffy.
Add egg substitute and blend well.
Sift flour, baking powder and salt.
Add to creamed mixture.
Alternate with flour and milk; begin and end with flour.
Add remainder of orange juice and vanilla.
Pour 1/2 into 10-inch tube pan coated with cooking spray.
Top with 1/2 apple mixture.
Add remaining batter.
Top with remaining apple mixture. Sprinkle brown sugar on top.
Bake at 350\u00b0 for 1 hour and 10 minutes.
Cool 10 minutes.
Remove from pan.
