Ingredients

1/2 c. sugar
1/2 tsp. salt
dash of pepper
1/4 c. vinegar
1/4 c. beet liquid
1 (1 lb.) can diced beets, drained (reserve liquid)
2 Tbsp. butter (before serving)
1/2 Tbsp. cornstarch
Preparation

In a 1-quart casserole dish, combine sugar, cornstarch, salt and pepper; stir in vinegar, liquid and beets.
Cook, covered, for 6 minutes or until mixture boil and thickens, slightly stirring during the last half of cooking time.
