Ingredients

1 c. butter or margarine
1 c. sugar
1 egg
2 1/2 c. flour
1/2 tsp. baking soda
1 tsp. salt
2 Tbsp. vinegar
1 tsp. vanilla
1 1/2 tsp. grated lemon rind
Preparation

Cream butter and sugar until light and fluffy.
Add egg and beat thoroughly.
Add sifted dry ingredients, vinegar and flavoring; mix well.
Drop teaspoonfuls on greased cookie sheets. Sprinkle a little granulated sugar on each cookie.
Bake in a moderately hot oven, 400\u00b0, for about 12 minutes, or until delicately browned.
Yields 5 dozen.
