1 (11 oz.) box pie crust mix
1/2 tsp. baking soda
1/2 c. sugar
1/2 c. firmly packed light brown sugar
2 eggs
1/2 c. chopped pecans
1/2 c. coconut (not fresh or frozen)
1 c. butterscotch morsels
Preparation

Preheat oven to 375 degrees. In large bowl, combine the pie crust mix, baking soda, sugars and eggs. Beat until well mixed. Stir in the pecans, coconut, and butterscotch morsels. Drop from a teaspoon onto ungreased cookie sheet, spacing the
cookies 2 inches apart. Bake for 8 to 10 minutes until lightly browned. Immediately remove the cookies from the cookie sheet and cool on rack.
