Flounder Creole - cooking recipe
Ingredients

2 Tbsp. butter or margarine
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 lb. mushrooms, sliced
1 (1 lb.) can tomatoes, drained
2 Tbsp. lemon juice
1/4 tsp. dried leaf tarragon
1 bay leaf
1/4 tsp. Tabasco sauce
1/2 tsp. salt
1 lb. flounder fillets
Preparation

Melt butter or margarine in a large skillet.
Add onion and green pepper; cook until tender.
Add mushrooms; cook 3 minutes. Add tomatoes, lemon juice, tarragon, bay leaf, Tabasco sauce and salt.
Cover; simmer 20 minutes.
Add flounder fillets; cover. Simmer 5 to 10 minutes, until fish flakes easily.
Makes 3 to 4 servings.
