Aunt Sophie'S Sweet Potato Souffle - cooking recipe

Ingredients
    4 lb. hot cooked sweet potatoes or yams (canned okay)*
    1 stick butter (1/4 lb.)
    2 c. sugar
    4 eggs, beaten
    3/4 c. evaporated milk
    1 tsp. lemon extract
    1 tsp. allspice
Preparation
    *Sophie boils her whole potatoes until fork-tender, then peels them while they are still hot.
    If you use canned potatoes, heat them in the microwave.
